Best Ever Avocado Toast
Yes, I know… what a millennial am I, writing about the best ever avocado toast? I happen to be an avocado toast aficionado. And since so many people are making bread at home these days, let’s talk about two delicious ways you can enjoy the fruits of your labor.
Avocado is one of my favorite fruits in general. They don’t have a lot of flavor by themselves, so they carry other flavors really well. Avocados are also nutritional powerhouses. They’re packed with vitamins, potassium, magnesium, fiber, omega-3 fatty acids, and healthy fats. I’ve actually used avocado as a 1:1 substitute for butter in healthier versions of my favorite recipes, like brownies. And of course, I’ll never turn down a bowl of my favorite guacamole.
What really takes avocado toast to the next level is a good, thick slice of bread. Even though it’s basically just a vessel for avocado, a good bread makes a difference! I tend to prefer a thick, whole-grain or seedy bread. If you’ve gotten into bread-making at home, feel free to use a thick slice of that. I recently made a couple loaves of sourdough bread, which are delicious and would be a great base for avocado toast. But at the time I made this toast, I hadn’t made my sourdough. For the sake of this post and recipe, I used a “Super Seeds” loaf from local bakery Bread & Butter.
After finding your desired bread, the next step is finding ripe avocados. Avocados are super finicky when it comes to ripeness. There’s a short time when they’re just perfect, and if you miss that by even the slightest bit, they go to mush. It’s really sad.
There are a few things you can do to check if your avocado is ripe and ready for toast. If you gently press into the skin, and it feels firm and doesn’t budge, then it’s likely not ripe yet. You don’t want it to squish completely, but you want a little softness.

Another trick is to check under the stem at the top of the fruit. If you can pop the stem off easily and you see green underneath, then your avocado is ready! If you see brown underneath, it’s overripe and probably brown on the inside. If the stem doesn’t come off at all, it’s not ripe enough.
How to make the best ever avocado toast
One of the best things about avocado toast is you can customize it based on your tastes and preferences. You can go as simple or extravagant as you want. Or you can get creative with whatever you have in your fridge or pantry!
To make avocado toast, you will need some combination of the following:
- 1-2 ripe avocados
- Bread, obviously
- Lemon or lime juice (fresh, preferred)
- Olive oil (or other preferred oil)
- Salt, pepper, and other seasonings
- Crumbly cheese, like goat or feta (burrata if you want to get really bougie)
- Eggs for topping (scrambled, poached, or soft-boiled) – optional
Simply Delicious Avocado Toast
First up is a simple, basic, and delicious avocado toast. Honestly, I enjoy just a mashed avocado atop thick, toasted bread with a sprinkle of flaky salt. But this kicks it up a notch or two.
To make it:
- Toast one thick slice of bread to desired darkness.
- Halve, peel, and carefully slice an avocado, and layer slices over bread.
- Squeeze juice of half a lemon over avocado slices.
- Sprinkle with Everything But The Bagel seasoning.
Spicy Goat Cheese Avocado Toast
The second recipe we’re making is inspired by an avocado toast I had at a coffee shop in Nashville several years ago. It was absolutely delicious, but I knew I could make it at home for way cheaper than $7 per serving.
To make it:
- Toast one thick slice of bread to desired darkness.
- Halve, peel, and mash an avocado in a small bowl; season with salt and pepper.
- Spread avocado mash on toasted bread.
- Drizzle olive oil over avocado. Add large pieces of goat cheese.
- Sprinkle with paprika, cayenne pepper, chili flakes, or your preferred spice for heat.
These are my two preferred ways to enjoy avocado toast for breakfast. You can of course get creative and make your favorite version. No matter how you make it, you’ve got yourself a healthful, filling breakfast, that also happens to look really pretty on Instagram and Pinterest.
