Apple Arugula Flatbread with Prosciutto and Bleu Cheese
I often forget about flatbreads in my weekly meal planning and recipe creation. They’re so easy to assemble, and can be as extravagant or simple as you like. This Apple Arugula Flatbread is a lovely homage to summer, while spotlighting the warm flavors of fall.
Apple Arugula Flatbread with Prosciutto and Bleu Cheese
This flatbread is inspired by one I had at a winery in Virginia earlier this fall. We were visiting some friends for the weekend, and they took us to a lovely winery about an hour outside of Washington, DC. I snacked on a very similar flatbread while I sipped my wine. After only a few bites, I knew I’d want to recreate it at home.
This flatbread is a perfect way to use your apples and/or apple butter from your orchard adventures or farmers market visits. It’s a great workweek lunch or easy dinner after a long day. If you use simple ingredients and aren’t making your flatbread from scratch (more on that below), you can have this ready to chow down in as little as 15 minutes!
For my version, the flatbread features my homemade apple butter, thinly sliced Honey Crisp apples, mozzarella, crumbled bleu cheese, arugula, prosciutto, and a balsamic vinegar drizzle. The sweetness of the apples and apple butter is balanced perfectly with the tangy bleu cheese, peppery arugula, and salty prosciutto. All together, this flatbread is filling and satisfying, but won’t weigh you down or sit heavy in your stomach.
I’ll admit that I did not make the flatbread from scratch—gasp, I know! I used the long, rectangle pizza crusts from Trader Joes. As much as I love making things from scratch as often as possible, sometimes I just like to keep it easy and simple, especially if I’m whipping up something for lunch during my work day. Homemade flatbreads aren’t my forte, either. Next time I make this, I might try my hand at homemade flatbreads. I’m sure that will take this already delicious dish to another level.

As far as the ingredients go, you can go as fancy or basic as you want. You can get your favorite gourmet or specialty bleu cheese, or your favorite grocery store brand. You can use whatever apples you have on hand—but I will say apples with a little tartness work best. Granny Smith would be really nice. Prosciutto and the balsamic drizzle are optional, but the extra flavors they add really make this flatbread stand out.
How to make this super easy flatbread
This isn’t a super complicated recipe, in terms of ingredients or assembly. It’s quite simple to put together!
You will need:
- Apple, thinly sliced
- Flatbread
- Apple butter
- Bleu cheese
- Shredded mozzarella cheese
- Arugula
- Balsamic vinegar or balsamic reduction
- Prosciutto slices
First, prepare the flatbread. If you’re making yours from scratch, bake according to the recipe. If you’re using store bought flatbreads, prepare them according to the package instructions. For mine, I brushed the top with a light layer of oil and baked it for 5 minutes at 450º F.
Spread on the apple butter and add cheese. Spread the apple butter evenly across the flatbread. Sprinkle a thin layer of mozzarella cheese and a few bleu cheese crumbles. Layer on the apple slices, and then add the remaining cheese.
Bake the flatbread. Carefully place the flatbread in the oven and bake it just long enough to melt the cheese and soften the apples—about 5 minutes at 450º F.
Add remaining toppings. Remove the flatbread from the oven. While it’s still hot, sprinkle on a little more cheese, if desired. Add arugula and prosciutto slices, and drizzle on the balsamic vinegar.
Slice and enjoy! This is best enjoyed with a chilled glass of white wine.
There y’all have it, my recreated Apple Arugula Flatbread! Mine obviously isn’t quite the same as the one from the winery, but it’s as close as I’ll get without going back.

Ingredients
- 1 flatbread (homemade or store bought)
- 1/4 cup apple butter
- 1/2 cup shredded mozzarella cheese
- 1 apple, thinly sliced
- 1/4 cup bleu cheese crumbles
- 2 tbsp balsamic vinegar or balsamic reduction
- 2-3 Prosciutto slices
- Arugula
Instructions
- Preheat the oven to 450º F.
- Prepare your flatbread according to the recipe or packaging instructions. Before topping, brush the top with a thin layer of oil.
- Spread the apple butter across the flatbread. Add half the mozzarella and apple slices, then the remaining mozzarella and bleu cheese crumbles.
- Bake the flatbread for 5 minutes - just long enough for the cheese to melt and apples to soften.
- Remove from the oven. Top with arugula, torn prosciutto slices, more bleu cheese crumbles, and balsamic vinegar.
- Slice and enjoy!
