Winter Fruit Salad
As much as I love soul-warming comfort food in the winter, sometimes all I want is a big bowl of fruit salad. This Winter Fruit Salad combines some of the season’s best flavors for a side, snack, or breakfast addition when you want a healthy option.
I first made this for Christmas brunch a couple years ago, or at least a version of it. It was a really nice complement to the sweet and savory items on our plates: French toast, bacon, sausage, and grits, if I remember correctly. I made the fruit salad again this year, for New Year’s Day brunch with friends, and it was quickly eaten up.
My Winter Fruit Salad is made with blueberries, kiwi, oranges, and pomegranate seeds, with a lime and honey “dressing.” You could of course add in more of your favorite fruits, but I found that four is a good mix. That way there isn’t too much going on, and you get all the flavors and colors. I’ve made this with cara cara oranges and blood oranges; you could of course use canned mandarin oranges if you like those. If you like pears, you could add in some chopped pears, too.
I didn’t try this myself, but as I’m writing this post, I think this would be delicious with some chopped fresh mint tossed in. That would add some nice herby sweetness, and an additional touch of green to the salad. Note to self: try that next time!
There are plenty of ways to enjoy this Winter Fruit Salad:
- Healthy side dish with brunch or lunch.
- Mid-morning or mid-day snack during the work day.
- Enjoy it with yogurt and granola
- Spread it atop waffles or pancakes.
- Top your ice cream with it.
How to Make Winter Fruit Salad
To make it, you will need:
- Oranges
- Blueberries
- Pomegranate seeds
- Kiwi
- Limes
- Honey
Making this salad really could not be easier. All you do it peel and slice the oranges, pomegranates, and kiwi as needed, mix it all together with the blueberries, and toss it with lime juice and honey.
How you peel and slice the oranges and kiwis is up to you. I cut my oranges into supremes, but you could just peel and slice them into rounds. It depends on how much patience you have when you’re preparing the salad.
To peel the kiwi, I did the “spoon trick.” Slice off the tops and bottoms so a tiny bit of the green flesh is exposed. Then, slide the back of a small spoon under the brown skin separating it from the green flesh. Rotate the spoon around the kiwi until all the brown skin is removed.
Pomegranates are a bit trickier and can be messy, not to mention the juice gets everywhere and can stain. If you’ve got an apron, I recommend wearing that when working with whole pomegranates. This video is a good demonstration of the easiest way to slice and seed a pomegranate.
Side note: I find this video on how to slice every fruit very entertaining.
