Pumpkin Spice Cookies with Just 3 Ingredients!
Pumpkin Spice season is almost here, y’all! I’ll admit I’m not the biggest Pumpkin Spice Latte fan out there—most of them are way too sweet for my taste—but I love incorporating pumpkin spice flavors into baked goods. These Pumpkin Spice Cookies are one of my favorite fall treats.
I bake a lot, and I really enjoy baking from scratch. I love the process and experimenting with new recipes and ingredients that challenge me. But sometimes, for one reason or another, I just don’t have time or desire to bake from scratch, so hacks and shortcuts are welcome. Especially when those hacks lead to delicious pumpkin spice cookies with just 3 ingredients!
A hack or shortcut isn’t always a bad thing. I’ve found one ingredient that makes absolutely delicious cookies (and muffins, and cupcakes, and breads) with half the effort as baking from scratch. That’s why I love making cake mix cookies!
Pumpkin Spice Cake Mix Cookies
Cake mix is a super versatile ingredient, and an absolute game changer in baking. When holiday baking season comes around, I keep a couple boxes of cake mix on hand for expedient baking. Using it for cookies gives them a really soft and light, but moist texture, which, if you ask me, is the perfect cookie. I love a good chocolate chip cookie made with cake mix. Plus, all your dry ingredients and sugar are already there and done, you just have to add the wet ingredients!
I don’t see pumpkin as an October- or Halloween-only ingredient. I use it in cooking and baking all fall long, and sometimes even into January. There’s just so much you can do with it, especially in the baking department: breads, muffins, pancakes, cupcakes, cookies… so many options!
I’ve been making these pumpkin spice cookies every fall for several years. They’re soft, moist, and are ready to eat in under half an hour. Best of all, you only need three ingredients to make them—four if you add chocolate chips! And why wouldn’t you add chocolate chips, am I right?
These Pumpkin Spice Cookies are great to bake when you’re crunched for time and can’t make a batch of cookies completely from scratch. So if you need a quick treat for an upcoming gathering or special occasion, save this recipe!
Here’s my recipe for super easy Pumpkin Spice Cake Mix Cookies, with 3 simple ingredients!
Easy and pretty cheap, too. You can make these cookies for under $10. This batch will make 24-30 cookies.
YOU WILL NEED:
- 1 box spice cake mix
- 1, 15-oz can pure pumpkin puree
- 1/4 cup plain Greek yogurt
- 1 cup chocolate chips and/or chopped nuts (optional)
- Dash of pumpkin pie spice for extra flavor (optional)
If you can’t find spice cake mix, white cake mix works great. Just add a couple teaspoons of pumpkin pie spice, or a combination of cinnamon, nutmeg, clove, and allspice. I usually go for dark chocolate chips, as I think milk or semi-sweet would be too sweet.
TO MAKE THE COOKIES:
- Preheat oven to 350º F. Lightly grease a baking sheet, use a silicone baking mat, or line it with parchment paper.
- Mix all ingredients together in a large bowl. The dough will be like a very thick cake batter.
- Drop dough onto the baking sheet by the spoonful, about 2 inches apart. You’ll fit about 12 drops of dough per sheet. A 1.5-inch cookie scoop makes this super easy!
- Bake for 10-12 minutes, or until cookies are a little brown around the edges but soft in the middle.
- Remove cookies from the oven. Let them cool on the sheet for 5 minutes, before moving onto a wire rack to cool completely.
See? I told y’all, it really couldn’t be easier. You can easily whip these cookies up in less than an hour.
This recipe makes about two dozen, two-inch cookies. You can make bigger cookies; just add a few minutes to the bake time. Store them at room temperature for two days, or in an airtight container in the refrigerator for a week—if they make it that long!
Since these are so quick and easy to make, they’re ideal for last-minute or short-notice situations, or when you’re busy and don’t have time to put together something elaborate. They’ll also make great treats for Halloween night… for Trick-or-Treaters or candy distributors.

Pumpkin Spice Cake Mix Cookies
Ingredients
- 1 box cake mix (white or spice)
- 1 tbsp pumpkin pie spice (if using white cake mix)
- 1 can pumpkin puree (15 oz)
- 1/4 cup plain Greek yogurt
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350º F. Line a baking sheet with parchment or a silicone baking mat, or lightly grease with baking spray.
- Add all ingredients to a large mixing bowl, and stir to combine. The dough will be like a very thick cake batter.
- Chill your dough for about 30 minutes.
- Using a 1.5-inch scoop, scoop the dough onto the prepared baking sheet. Place the scoops about 1 inch apart.
- Bake for 10-12 minutes, until the edges barely start to turn brown.
- Let cool on the sheet for 5 minutes, before moving onto a wire rack to cool completely.
