Candy Cane Cake Mix Cookies
Chocolate and peppermint is one of the best flavor combinations, especially at the holidays. These Candy Cane Cake Mix Cookies put a fun spin on that classic flavor duo—plus they’re super easy to whip up and bake!
Y’all know how much I love baking things from scratch. But sometimes, little hacks or shortcuts are just easier, and usually taste just as good as the original. Cake mix cookies are one of those shortcuts for me, especially during the holiday season when life is super busy and my kitchen is turned upside down. I keep a few boxes of cake mix (in different flavors) in the back of the pantry for quick cookie recipes, like these.
Why Cake Mix Cookies?
Cake mix already has the sugar, salt, and leavening (baking powder and/or baking soda) mixed in. So basically all you, as the baker, have to add is the oil and eggs, and any other flavors or chips you want. And since there are so many existing flavors of cake mix available, you can create some really unique and delicious cookies (or other baked treats).
Cake mix cookies are super soft. These cookies are definitely on the softer, more cakey side than some of my other cookie recipes, but I promise you they are equally delicious! If you like thick, cake-like cookies, this recipe will be right up your alley.
Best of all, this cookie recipe comes together in just one bowl with only a few ingredients. It’s so simple, easy, and convenient. One-bowl recipes are my favorites.
Candy Cane Cake Mix Cookies
To make these cookies, you will need:
- Chocolate cake mix (devil’s food works really well)
- Eggs
- Neutral oil (vegetable or canola)
- Dash of peppermint extract
- Mint baking chips (optional; crushed Andes mints work, too)
- Candy Cane Hershey Kisses (or something similar)
The beauty of cake mix cookies is that the dough couldn’t be easier to make!
Add ingredients to a mixing bowl and stir. Add everything except the Candy Cane Kisses to a mixing bowl. Use a wooden spoon or rubber spatula to mix everything together until combined and a dough forms.
Chill the dough and preheat the oven. Cover the bowl and chill the dough while the oven preheats to 350ºF. Line or grease a baking sheet. Unwrap 24 Hershey Candy Cane Kisses.
Scoop the cookies and bake. When the oven is preheated, remove the dough from the refrigerator. Use a small cookie scoop or spoon to portion the dough into roughly 1-inch balls. Bake the cookies for 10-12 minutes, or until set but still soft.
Top warm cookies with Candy Cane Kisses. While the cookies are still warm, press one Candy Cane Kiss onto each cookie. It will melt a little bit, but will harden again as the cookie cools.
These cookies are best enjoyed freshly baked. Store the cookies in an airtight container for up to five days. Refrigerate for longer storage. Unbaked dough balls can be frozen for later baking.
